GREEK CHICKEN AND ORZO
Today was a wonderful day. My classes are done and I got back one grad, an A in Research Methods for political managers. Woo hoo! Since I had the whole day, I decided to use my Crockpot. Awhile ago I bought a crockpot recipe book and decided to make Greek Chicken and Orzo. Delicious huh?
Well, the orzo had an amazing lemon taste that I loved, but the chicken was a little too salty. I’m not sure what I did wrong. I think I might have used garlic salt instead of garlic powder. That was the other thing, I think it could have been a little more garlicy.  I’d say less salt and more garlic to make this dish perfect.
The best part of my dinner was the feta cheese. I went to a cheese store 2 blocks away called Cowgirl Creamery and bought some fresh feta cheese. It is AMAZING! If you have a store near you, I highly suggest you go there. Beyond having amazing cheese, all the workers there are HOT. Every time I’ve been inside there is always an amazingly good looking guy offering to help me buy cheese 
Ingredients
2 medium green bell peppers (I didn’t have any so I didn’t use any peppers)1 cup chopped onion2 teaspoons of extra-virgin olive oil8 chicken thighs (I used chicken breasts)1 tablespoon dried oregano½ teaspoon of dried rosemary½ teaspoon of garlic powder¾ teaspoon of salt½ teaspoon of black pepper8 ounces uncooked dry orzo pastaJuice and grated peel of 1 medium lemon½ cup water2 ounces crumbled feta cheese

Directions
Coat crock pot with cooking spray and add onions (and peppers if you have them)
Heat oil in large skillet over medium heat and wait til oil is hot
Brown chicken on both sides
Put chicken in the crock pot
Sprinkle chicken with oregano, rosemary, garlic powder, ¼ teaspoon of salt and ¼ teaspoon of black pepper
Cover and cook on low for 5-6 hours
Transfer chicken to separate plate and turn cooker to high
Stir in orzo with lemon juice, lemon peel, water, and remaining salt and pepper
Put chicken bake into crock pot
Cover and cook for 30 mins
Garnish with feta cheese
